You would think I was pregnant (I'm not, I'M NOT) due to the weird ass craving I've had lately for Green Bean Casserole. You know the kind, with the cream of mushroom soup and the fried onions. Or maybe you don't know the kind, because you're like Carson and you were born and raised in Santa Monica and you don't even know what casserole is. I made it (for myself because no one else in my family is down with casserole) in all of it's original glory with one slight adjustment: fried shallots vs. the canned onion version. I could eat those all, day, long. And they were a delightful addition to the casserole. I felt like a gourmet Midwesterner.

then everything changed and I ended up a reborn Colorado (after some time appreciating clam chowder and cheesesteaks while in med. school on the Eastern seaboard) casserole gal...
Not only easy, they are comfort food extraordinaire and I have all sons who play hockey and eat like horses...so am a convert: love. casseroles. lotsa.
I actually HATE green beans, but my husband makes a killer casserole, that even I love. Its kind of outdated with corn flakes for crunch, but it's insanely delish!
I grew up in the midwest and my mom never made green bean casserole ever. (probably because my dad is a picky eater) When I got married (my husband is from Las Vegas) my mother in law makes it for Thanskgiving, Christmas, Easter you name it and I love it! So I am making the green bean casserole and also the Cheesy Potatoes (funeral potatoes as known to some). YUM! Now I can't wait for Thursday to get here!
It wouldn't be Thanksgiving in Eagan without this green bean "casserole"!!! So what does a Santa Monica Thanksgiving look like?
Loved my mom's tuna noodle casserole, but cooking roasted brussel sprouts and sweet potatoes with butter (yum) and rosemary for thanksgiving. Salivating now!
I forgot to add that my mother in law melts cheese over the top of her green bean casserole. Now I make it that way.
I'm having the family here, where will you be ?
How do people not know about green bean casserole?!?!
I'm definitely making it this year and will probably be eating it by myself which is fine with me.
