Meatball Muffins

Yeah, that sounds kind of gross, doesn't it?  But let me explain.  The other day I was all set to make fancy pants meatballs.  You know, with grated carrots, sautéd onions, fresh garlic and herbs, homemade bread crumbs soaked in milk and blah blah blah.  And then I remembered... OH, I have two kids now and OH, my baby only likes to be held during the evening hours and OH, grating carrots SUCKS.  At that point I happened to glance over at the Highlights magazine my son was "reading" and I saw a recipe for 'Meatball Muffins'.  They consisted of ground beef or turkey, a package of onion soup mix, ketchup, bread crumbs and one egg.  I also added some Parmesan.  Roll into 12 balls, place in a greased muffin pan, and bake for 35-40 minutes at 350.  Took me all of 5 minutes to make and can I tell you something??  They were so good.  


Crispy brown on the outside and perfectly cooked inside.  I threw them in some sauce, served them over pasta, dinner done.  If you're too good for the kiddie magazine recipe, or you just love grating carrots WHY, WHY DO YOU? then make your fancy pants recipe but at least try baking the meatballs in a muffin pan.  So easy.  The End.

what is the exact recipe? I couldn't find it on the highlights site.

I threw out the magazine and couldn't find the recipe online either but I THINK it was something like this...

1 lb. ground beef (I used turkey)
1 pkg. onion soup mix
1/3 cup ketchup
1/3 cup bread crumbs (I used panko)
1 large egg

*I also added 1/3 cup Parmesan

Just tried it! Very easy but I found it too salty... and my family usually tells ME that I make everything too salty! I used a package of lipton brand onion soup mix... for anyone else using the same, double the amount of ground turkey or halve the amount of soup mix! Then it should be perfect :D

I tossed it in an extra sweet tomato sauce with sauteed kale and mushrooms to balance out the salt.

I also made 26 small meatballs instead of 12 gigantic ones and used a foil lined baking pan sprayed with PAM. 20 min at 350F plus 2 min of broil was just right.

This is genius. I may not have kids (yet), but I hate standing in front of the stove rolling meatballs around, wondering "are they cooked all the way through?" "Ow! That oil just snapped at my arm!" "Oh, awesome. Half of them are all lumpy now." I will definitely be trying this out.

My son has actually been begging me to make this recipe from his Highlights magazine. Here's the actual recipe from the magazine:

2 lb. lean ground meat
1 envelope onion-soup mix
3/4 c. plain bread crumbs
2 eggs
1/3 c. ketchup

Preheat oven to 350F, and spray muffin tin with vegetable oil. Put everything in a big bowl, mix together. Roll into 12 balls and place them in muffin tin. Bake until well browned, about 35 min. Let stand a few minutes, then lift them out with a slotted spoon. Serve with ketchup or marinara.

We'll give it a try.
