Fresh Tomato Salad

PARTY PEOPLE WHAT IS UP!?!? I lost Internet for 3 days. You're probably expecting me to bitch and moan about how horrible it was, but sometimes it's a needed break. Like when you drop your phone in the toilet. At first you feel naked and desperate and you're all, WHAT IF SOMEONE NEEDS ME. And then you switch to, if someone needs me they won't be able to find me. HURRAY! When I lose the Internet, my first irrational fear is that my blog has fallen into a black, www abyss. Or that all of you fine readers have given up on me. NEVER GIVE UP, DO YOU HEAR?!

Ok, enough rubbish for one morning. Food. A friend of mine made a wonderful tomato dish the other day that I had to replicate. Look, I know this is a summery dish BUT IT'S 90 DEGREES HERE. Besides, such a thing exists as winter tomatoes, yes? All you need for this salad is tomatoes, basil, a shallot, red wine vinegar, olive oil and salt and pepper...


The better the tomato, the better the salad. Mine came from Roger The Builder's wife Linda, a great friend, cook and gardener. I had 5 tomatoes and used 1/2 cup of olive oil and 1/4 cup of red wine vinegar. One sliced shallot, about a tablespoon of chopped, fresh basil. Let it all marinate for awhile. Delish. Good day.

Any tips on how to cut tomatoes so they don't release their insides all over the place? Yours look nice. I can tell you in advance that mine would not. And I want to make this because I have approximately 20 tomatoes from my garden that need attention.
