10-Hour Chicken Dinner

I mean, for reals people, how many different ways can a girl roast a chicken?! Um, this many: here, here, here, here, here, here AND here. And now this one: the 10-Hour Chicken Dinner. Courtesy of my girlfriend's cookbook, again. Although... SHE might be my new girlfriend. But more on that later.

Chicken, stuffed with some garlic and thyme, sprinkled with some lemon juice, salt and pepper, all wrapped up tightly like a present...


Slowly cooks for 9.5 hours in a 200 degree oven. After that, removed, falling apart, looking a little like the turkey from Christmas Vacation...


Heat cranked up to 400, cooked for another 30 minutes to crisp the skin...


Again, it looks strange, but it was fall off the bone good. Especially with the chicken juices poured all over it. NO BUTTER OR OIL, people! That's like against the law, but it works.
