Carrot Cupcakes

These are delicious. But first...

Wow. I hate grating carrots. Maybe as much as I hate brushing my hair after a shower. But probably more. Because it takes forever, it's messy, and you almost always grate some of your finger off. My advice: buy shredded carrots.


Okay, back to the delicious cupcakes. Moist, packed with just enough spice, and there is no butter and lots of carrots! Healthy! Delusion! I used this recipe, but I bought cream cheese frosting in a tub (I know). I made them mini and baked them for only 10 minutes.

Ugh, reading your blog has proven to be a mistake. 1) I'm pregnant and 2) I don't bake and don't even really cook much. BUT, I have put links to your recipes on facebook many times and a few of those times have led to people baking for me! SCORE!

They're so cute, and they look delicious. You need a food processor...works great for slicing carrots :)

These are adorable! I hate grating carrots too...I started using my food processor (with the grater attachment of course) it works really well...and I get to keep the tips of my fingers! :)
