Butternut Squash

I am turning into a squash. Can't stop cooking it, can't stop eating it. I'm like a big ol' squash lady who lives in a squash house and has squash babies. I also really love the sound of the word and the way it looks when you spell it. SQUASH. So many Scrabble points...

I digress.

Carson and I have been obsessing over this recipe, so I tried a slight variation last night. To change things up, you know, keep our squashy lives interesting.

Butternut squash, cut in half, seeds scooped out. Small yellow crooked neck squash, chopped...


Yellow squash sauteed in some butter with a small shallot and one clove of garlic, salt and pepper...


Bread crumbs combined with yellow squash, placed atop butternut squash. Butter...


Baked in a 350 degree oven for 45 minutes...

I fed my daughter so much squash when she was a baby that her nose turned orange. For reals.
