I just spent a very quick and wonderful weekend in Minnesota with my mom, my aunts and my uncles. True to our Dutch heritage, food is always at the center of our family reunions. A future post will be devoted to a DeBoer Family Culinary Tour. But for now, I leave you with a Dutch Butter Cake (aka Boter Koek). It resembles a shortbread, if not slightly moister. A very simple cake consisting of A POUND OF BUTTER (Ina would be proud), sugar, flour, baking powder, egg yolks and almond extract. I added some lemon zest to my batter and some slivered almonds on top. My uncle Jon whipped up a tasty Peach Compote to serve on the side. Have I mentioned THE POUND OF BUTTER yet? Pure deliciousness.
I found a Midwest blog that features lots of Dutch recipes, and followed hers for Boter Koek. I have no idea how to say that, by the way, but when I attempt to I nod my head and spit a lot.
The good stuff...
Sugar, butter, flour, baking powder, egg yolks...
Almond extract in cake, slivered almonds on top...
Peaches, sugar, water...
Peach compote...
Baked Boter Koek!
