This is a salad I made. It was really good. (If I sound like I'm in kindergarten, that's because I'm tired.) I love arugula with lemon, and you should too.
Arugula and Endive Salad with Lemon Dressing
(Serves 2)
2 large handfuls arugula
1 endive, sliced
1/4 cup hearts of palm, sliced
2 T toasted pine nuts
Shaved Romano
1 T lemon juice
2 T olive oil
Salt and pepper
Combine first 5 ingredients in bowl. Whisk together lemon juice and olive oil, and season with salt and pepper. Toss dressing on salad. Enjoy!
