Caramelized Onions 101

Caramelizing onions might be my favorite thing to do. You know, second to playing with my son. I can't even cut an onion without a severe burning sensation in my watery eyeballs and I STILL love caramelizing onions. It makes the house smell sweet and salty and delicious, and it makes me want to dance.

That's taking it too far, nothing makes me want to dance.

So, how do you do it? It's fairly simple. Here's my way:

Caramelized Onions

1 large onion
2 T olive oil
2 T butter
3 sprigs thyme
salt and pepper
1 T balsamic vinegar


Slice onion. In saucepan, heat olive oil and butter over medium high heat. Add onions and a generous amount of salt and pepper. Cook for 5 minutes over medium high heat, then turn down to medium. Add thyme.


Saute onions over medium heat for 20 minutes, or until golden brown and caramelized. Sometimes this takes longer. Add balsamic vinegar and crank up heat for one minute. Remove from heat and serve.


Finally, add one Sweet Potato Gerber Puff.


That last step is optional.

I couldn't agree more about that smell. But, I do dance. It's the caramelized onions dance. I'll teach you.
