Easy Baked Sweet Potato

Everyone seems to be doing the cliche January cleanse or detox or diet right now, which I've never understood.  I get that the holidays and the over-indulgences that come with them can leave us feeling out of sorts, but I never see the point in restrictive eating.  If anything right now, I want to eat MORE... of the right foods.  More fruits instead of the same old banana and apple (Carson is so good at this), a larger variety of whole grains, different fishes instead of our go-to salmon and new vegetables.  And after all of that, you can bet your bottom dollar (my name is Annie) that I'll eat dessert.  My middle name is moderation.  That's right, my full name is Annie Moderation Pinter.

In an attempt to eat new vegetables, I baked sweet potatoes the other night.  I realize this isn't a new phenomenon, but I tend to overlook the starch.  I LOVE baked potatoes, completely loaded up, so this is a slightly lighter version of that and very easy to pull off.  Simply wash your potato, poke it all over with a fork, rub it in some olive oil, salt and pepper and bake directly on the rack for 70 minutes at 375 degrees (I place some foil on the rack below to catch the dripping oil).  This particular potato is loaded with sautéed broccoli, low-fat cheddar, crispy pancetta and diced avocado.  It would have been topped with a dollop of greek yogurt if I had any.

I love baked sweet potatoes! I usually fatten them up with honey butter but your version looks so delicious (and healthy). Definitely going to give the a try!

I do a baked sweet potato for lunch with a little smart balance spread, a drizzle of honey, some cinnamon and sometimes some dried cranberries/toasted almond/pecan/whatever I have..

I would love to see you do some vegan and vegetarian dishes. Ohhh, I would love to see you cook a Thai green curry dish with rice. Yummmm!!

I will definitely be following, I admire Carson he just seems like a really great guy and can't wait to learn more about you and the wee ones.
