Roasted Vegetable Meatloaf with Balsamic Glaze

I know what you're thinking... MORE meatloaf?? Well, you know what I'm thinking? That I'm so glad the Mavs beat the Heat. (Yeah I'm not really thinking that, but I'm trying to impress the fellas who read my blog. There are some, right?)

I've used THIS recipe before, and it's a keeper. You can go all out with the veal/pork/beef trio, or you can lighten it up with ground turkey (what I did last night). Either way it's amazing, especially if you serve it with THESE sauteed mushrooms.

lots of balsamic glaze...


caramelized, sweet, crispy, top (it's not burnt, I swear)...

Just made this meatloaf last night with the mushroom side dish... let me just say... BEST meatloaf i've ever had, and the sauteed mushrooms were AMAZING!! I'm making it again very soon, such an awesome recipe!! Thanks so much for sharing ;-)
