Roasted Peppers with Capers and Mozzarella

Have you ever ordered roasted peppers at an Italian restaurant or deli and loved them? These are just as good. Maybe even better. And YOU made them. Well, actually, I made them. But you're GOING to make them. Because you know what's good for you. I'm even thinking you could jar the peppers, sans the mozzarella and parsley, and give them to the dads in your life for Father's Day! Wow, you're welcome you guys, you're welcome. (Recipe HERE.)

sliced...


marinating in red wine vinegar and garlic...


add capers, mozzarella, fresh parsley and a drizzle of olive oil...
