Stuffed Artichokes with a Dijon Dip
4/28/11
What's worse, saying "easy peasy" or "super simple"?? Whichever one makes you gag less, insert it here...
This is a(n) __________ side dish, light lunch, appetizer or snack (for tonight when you stay up all night in a fancy hat glued to the tele). Here's what you do.
steam artichokes (one inch of water, some lemon wedges, covered, 45 minutes)...
cube some bread and brown it in olive oil (an added garlic clove adds flavor)...
soak browned bread with halved cherry tomatoes in some olive oil, balsamic and salt & pepper (I chopped up the garlic clove and added that too)...
make a dipping sauce consisting of greek yogurt (or mayo, or sour cream), dijon mustard (lots) and a dab of olive oil...
stuff tomato/bread mixture into artichokes and dip...
