Oatmeal Chocolate Chip Cookies

Because, it's Thursday.
Also because I got this book as a birthday present, and I'm a teensy bit obsessed...
Isn't it purty? I keep it out in my kitchen for all to see. Anyway, I decided to try out her cookie recipe, only altering it slightly to use what I had in the house. They are scrumptious.
Oatmeal Chocolate Chip Cookies
(Makes 20)
Slightly adapted from What To Cook And How To Cook It

1 3/4 stick unsalted butter, room temp
3/4 cup fine sugar
1 large egg, yolk only
1 tsp vanilla
2 cups cake flour
1/2 tsp baking powder
1/4 tsp salt
1/2 cup oats
Chocolate chips, to taste
Preheat oven to 400. In a large bowl, cream together butter and sugar with an electric mixer until pale and fluffy. Add egg yolk and vanilla and mix for another couple of seconds, until combined.
Add flour, baking powder and salt. Mix until a stiff dough is formed. Stir in chocolate chips and oats.
Roll dough into 20 balls. Place on baking sheets lined with parchment paper.
Bake 8-10 minutes (my oven only needed 8).

I'm afraid after trying many of your recipes, instead of skinny dipping, I'll have to chunky dunk!
Putting oatmeal in cookies makes them healthy, right?
Oh my word! These cookies look perfect. I love it when cookies bake up nice & thick.
I am going to make these, and then also the carrot pea lentil soup. So they cancel each other out right? I think the ratio is 1 bowl of soup to 7 cookies. yeah that sounds correct. Wee!
