Chocolate Truffles

Hi. My name is Siri, and I am addicted to chocolate. I would probably cut you if you got between me and it. After I made these Chocolate Truffles, I clapped. One, single, loud clap. A woman, alone in a room, clapping for chocolate. Help.
But you don't understand. Chocolate Truffles are extremely easy to make!! They have 2 basic ingredients: chocolate and cream. A dab of vegetable oil make them glisten. Endless ways to improve upon them. To the chocolate and cream add coffee, mint, balsamic vinegar, rum, cherry liqueur, etc. Roll it in nuts, coconut, dip it in white chocolate, etc.
Only MUST: use good chocolate. I love this stuff. But there's even better out there. Please enjoy. And clap.
Chocolate Truffles
(Makes 30)

20 oz. bittersweet chocolate, chopped (or use chips)
1 cup heavy cream
1 tsp vegetable oil
Cocoa powder for dusting
Place half of chopped chocolate (10 oz.) in a heatproof bowl.
On stovetop, bring heavy cream to a boil. Remove from heat and let cool for a minute or so.
Pour cream over chocolate in bowl and gently stir until smooth.
Let sit (or chill in fridge) until chocolate just begins to set. Then stir vigorously until chocolate thickens and lightens in color. Place by teaspoon onto baking sheet lined with parchment paper. Chill in fridge for a couple of hours.
Once truffles have chilled and set, remove from fridge. Melt the rest of the chopped chocolate in a double boiler (or place a heatproof bowl over a pot of simmering water). Add vegetable oil and stir. Remove from heat and let cool for a minute or so.
Using 2 forks, take truffles and dip in chocolate. Place back on baking sheet.
Sprinkle with cocoa powder.
*Store in airtight container AT ROOM TEMP! If you put them in the fridge the chocolate will turn dusty.
