Chicken & Stars Soup

The stomach virus that invaded our house for 5 whole days has left the building, praise Oprah! Here is a soup I made when everyone was barfing out their stomach linings. That's not appetizing. But the soup is!

Chicken & Stars Soup
(Serves 6)

2 T olive oil
2 large carrots
4 stalks celery
4 large cloves garlic
1 leek
1 tsp salt
1/2 tsp black pepper
1 T fresh basil, chopped
1/2 tsp dried oregano
4 sprigs thyme, removed from stem
4 cups chicken stock
2 cups roasted chicken, chopped
1/2 cup pastina


Heat olive oil in large pot over medium heat. Chop carrots, celery, leek (cleaned thoroughly) and garlic. Add to pot and season with salt and pepper. Saute for 5-7 minutes, until soft and fragrant.


Add herbs and saute for another minute or so.


Roughly chop chicken (I used leftovers from a whole roasted chicken but you could also roast 2 or 3 breasts or buy an already roasted chicken from the market).


Add chicken stock to pot and bring to a boil. Add chicken and pastina, turn down heat and simmer until pasta is cooked (roughly 10 minutes). Season with salt and pepper to taste.

The soup sounds delish. The barfing, not so much! Glad you're all feeling better!
