Chocolate Chip and Pomegranate Cookies

Let's take a trip down memory lane and remember how much I love the combination of chocolate and pomegranate. Tart and sweet and crunchy and melty. Last night I decided to try out the pair in a cookie. The recipe sort of came about by accident. I was running low on brown sugar, which I usually enjoy a lot of in cookies, so I had to make up for it with granulated sugar. The result sort of tasted like a holiday sugar cookie with festive ingredients like chocolate and pomegranate. Merry Christmas I mean Thanksgiving!

Chocolate Chip and Pomegranate Cookies
(Makes 24)

2 sticks unsalted butter, room temp
1/3 cup brown sugar
1 2/3 granulated sugar
2 eggs
1 tsp vanilla
3 cups flour
1 tsp baking powder
3/4 tsp salt
1 pkg chocolate chips
1 cup pomegranate seeds


Preheat oven to 350. With electric mixer, cream both sugars and butter for a couple of minutes, until smooth. Add eggs, one at a time, and mix. Add vanilla and mix until combined. In a separate bowl, whisk together flour, baking powder and salt. Slowly add to wet ingredients and combine. Stir in chocolate chips and pomegranate seeds.


Bake for 10 minutes, rotating pan halfway to ensure even baking (a new thing I'm doing that really works, thanks Martha).


p.s. Yes, those lights behind the cookie dough make up my Christmas tree. Don't make fun.
