Mustard Roasted Snapper

I've watched Ina Garten make this dish eleventy times. No, for reals. The Food Network reruns this episode an absurd amount of times. And every time I watch it I think to myself, that looks stupid good and I should make it. Well, eleventy times later I did! It is good, sort of tastes like a healthy, non-fried version of fish and chips. But I have a few things to say...

First, I used non-fat Greek yogurt instead of creme fraiche, and I think that was a mistake. It ended up curdling a bit, and I don't think it would of had I opted for the fattier stuff. Secondly, the recipe calls to cook it for 10-15 minutes. I think 12 is perfect, and yet I freaked out and cooked it for 14. Overdone, sigh. Finally, Ina smothers her fish in the sauce and I think it's too much. Even though the flavors are superb, I ended up scraping some of it off.

Here's the recipe. A really basic and simple fish dinner with great flavor!

Funny! Almost made this 100x but it always seems to get usurped last minute. I'm not a huge fan of snapper but bet this would work with any fish! Love Ina's recipe, thanks!
