Chicken Salad

I make chicken salad a lot because my son likes it, my boyfriend likes it, and I like it. Hey!!! I bet YOU will like it TOO! Alright then.

Chicken Salad
(Serves 4)
Printable Recipe

1 roasted chicken, breasts removed and roughly chopped
1/3 cup finely diced white onion
2 ribs celery, finely diced
1/4 cup toasted pine nuts
1/2 cup mayo
1 tsp mustard
Salt, pepper and garlic salt to tast

Place diced onion and celery into a medium bowl. Add pine nuts. Set aside.


Place chopped chicken into a food processor. Pulse until you've reached desired consistency (I like mine pretty fine).



Add chicken to bowl. Stir in mayo and mustard. Season with garlic salt, regular salt and pepper, to taste.

This recipe is also really good with chunks of tomatoes or sliced grapes. Also good to substitute the chicken with tuna. Something to try! :)

I love the fine ground texture you got on the chicken. Maybe that's what I need to try next time. Sounds good Siri, thanks for the reminder of an easy lunch!

Sadly, it never dawned on me to use a food processor for the chicken. That's why I read your blog -- to learn.
