Mascarpone Mini Cupcakes with Raspberry & Mango Glaze

8/30/10

Summer isn't over yet. Technically we have a few weeks left. Besides, I ALWAYS wear white after Labor Day because I like to stick it to the MAN. Here's another way to break society's rules: make these adorable, bright, fruity, mini cupcakes in September. I dare you. While your friends are buying back-to-school Trapper Keepers and raking leaves and eating Hot Dishes, you will be popping these absurdly decadent (yet light) treats into your mouth while listening to Reggae.

Recipe here. It calls for strawberry glaze but you can basically take any frozen fruit and turn it into icing. Brilliant!

Those look great! I have never really understood Marzipan, but whatever it is, you have made it look like an amazing cupcake:)

they sure are pretty! Love the idea of using fruit in the icing. It makes it into health food that way :)

Siri, I ate 6 of these on Sunday. You are not good for my waistline! But I heart you anyways...
