Homemade Pickles (in 2 weeks)

Yesterday, I did something that would have made my Grandmother proud. I made my own pickles! Well, no Grandma, I didn't use cucumbers from my own garden and yes Grandma, I did buy these jeans with the holes already in them (she woulda been proud, I swear).

If you read my blog regularly, you've probably noticed my new obsession with Jim Lahey's book, My Bread. As I was paging through it the other day, I came across the Sandwich section which was not just about bread, meat and cheese. No no, he includes recipes for homemade aioli and roasted red peppers and homemade pickles! I modified the quantity of ingredients slightly and used Persian cucumbers instead of Kerby's. They'll be ready in 2 weeks, so come back and SEEEEE!

I keep asking if they're done yet.

Homemade Pickles
Slightly modified from My Bread, by Jim Lahey
Printable Recipe

6 Persian cucumbers
3 cups water
2/3 cup red wine vinegar
6 cloves garlic, peeled
1/4 cup salt
1/4 cup coriander seeds


Clean cucumbers and dry. Combine the rest of the ingredients in a bowl and stir until salt has dissolved. Pack cucumbers tightly into jar. Pour in brine. Refrigerate for 2 weeks, turning jar over once or twice.



Are they done yet?

Nice! I'm gonna have to try these. I have an awesome cucumber person at my local farmers market!

No dill! I am NOT a dill fan at all so this intrigues me :) Now I have 2 kids of pickles to make when the garden gets on with it already.
