Grilled Lemon Garlic Halibut

Third day of vacation. We haven't seen much sun but that's okay, because doesn't that cocktail look like a pretty sunset? Works for me! (In case you're interested it's vodka, OJ, some pom juice and a splash of Fresca with a twist of lime...uh huh.) Besides, cloudy skies means more cozying up in the kitchen. Today I'm making Mussels in a Coconut Curry Broth. WHAT?! Yesterday we had BBQ chicken for lunch...
And for dinner we went to the dock, bought some fresh halibut and grilled them with a lemon garlic marinade. It tasted light and brilliant.
Grilled Lemon Garlic Halibut
(Serves 2)
Printable Recipe
2 Halibut filets
1/2 cup extra virgin olive oil
Juice of 1 lemon
1 T fresh parsley, chopped
3 cloves garlic, crushed
Salt and pepper
In a baking dish, whisk together olive oil, lemon juice, chopped parsley, and crushed garlic. Season both sides of halibut with salt and pepper. Place filets in marinade and let sit for 15 minutes, flipping once.
Grill for 4 minutes per side or until cooked.
