Fruit Salad with Limoncello

6/1/10

Did everyone have a nice Memorial Day weekend? I spent mine in 107 degree heat. HELLO summer! And to cap off the summery weekend, last night I made a delicious dessert courtesy of the lovely Ina Garten. Red and blue berries with white greek yogurt, go America! The berries were soaked in Limoncello, and the non-fat Greek yogurt was sweetened with a touch of honey and vanilla (I omitted the lemon curd). I added bananas and blackberries because my raspberries had little white fuzzy goo all over them.

Now, I am someone who usually does not consider something dessert unless it's dripping in chocolate, but I LOVED this fruit salad. It could work for breakfast, a snack, dessert, etc. Here's the recipe. TRY IT NOW!

I love Limoncello. I had a pretty good Limoncello bread pudding once, but this sounds much better for this hot weather.
