Aren't they cute? I hope my son thinks so. And I hope he thinks they're for eating and not for kicking around the house. I mostly made them for him. A healthy little snack. I like them too, as long as I eat them with butter and honey.
Mini Bran Muffins
Recipe adapted from the Bob's Red Mill Wheat Bran bag
(Makes 30 mini muffins)
1 cup bran
1 1/2 cups flour
1 tsp baking soda
1 tsp baking powder
3/4 cup milk
1/4 cup applesauce
1/4 cup molasses
1 T honey
2 T vegetable oil
1 egg
Brown sugar, for sprinkling on top
Preheat oven to 400. In a large bowl, stir bran, flour, baking soda and baking powder together. In a medium-sized bowl, whisk milk, egg, molasses, honey, applesauce and oil together.

Add wet ingredients to dry and stir until combined. Spoon into greased mini muffin tin. Sprinkle tops with brown sugar. You know, to make them edible.
Bake for 10 minutes.

I've never made bran muffins before. That's going to have to change.
I should try these. I'm always looking for healthy stuff that's easy to shove at my kids. lol!
You totally need to try the shrimp and grits thing. Maybe I'm a little bias (having been born in Charleston and all) but it's one of my favorites! :-)
