Orzo with Rainbow Vegetables & Feta

Spring. Side. Dish. Those are literally the only 3 words I have time to type right now with my 1 yr old running in circles around the house. More later during nap time... or as Mommy likes to call it... Joy.

Orzo with Rainbow Vegetables & Feta
(Serves 2)

1/2 cup orzo
1 T olive oil
1 clove garlic, minced
1 yellow squash, diced
1/3 cup roasted red pepper, diced
1/3 cup peas
1 tsp lemon zest
1/4 cup feta
Salt and pepper


Bring water to a boil in small pot. Add orzo, and boil until al dente, 6-8 minutes. Drain and set aside. Heat olive oil in saute pan over medium heat. Add garlic and saute until fragrant. Add diced vegetables and peas. Season with salt and pepper. Saute for 5-10 minutes.


Add orzo, lemon zest and stir. Right before serving, add feta.

Will you please get in the car and drive some of this into Hollywood for me so I can eat it for lunch? It shouldn't take you longer than 2 hours door to door. Thank you.

Holy crap, this looks really good. Whole Foods sells something like this. I gotta try this one out!
