I was really excited to make a leftover Mushroom Meatloaf open faced sandwich for lunch. I was going to take some sourdough bread and brush both sides of it with olive oil. Then I was going to slice the meatloaf and place it on the bread. Maybe add a couple spoonfuls of marinara, and top it with mozzarella. Then I was going to broil it for a few minutes, until the cheese bubbled and the bread got toasty.

But then I remembered I'm a mom and I don't have time to eat lunch. Handful of veggie chips anyone?
