Trader Joe's, sometimes you make life so easy. As a hard-working mother to 3 children (only have 1, 3 sounds better), I often don't have the time to make the homemade feast I would like to. This is where TJ's comes to the rescue. Last night I made a store-bought, pre-seasoned Filet Mignon Roast in 30 minutes! Perfectly cooked, perfectly seasoned, zero effort. I did brown both sides on the stovetop before roasting, so maybe 3% effort, but that's not bad!
Then, as a side, already cooked polenta. I'm sure you can get it at regular markets, it's just so cheap at TJ's! Looks like this:
Parmesan Polenta
1 pkg cooked polenta
Olive oil
Salt & pepper
Grated parmesan or romano
Here's what you do. Preheat oven to 350. Slice polenta into 1/2-inch thick rounds.
Lightly oil a baking sheet. (Please excuse the shittiness that is my baking sheet.) Place polenta on oiled surface and flip over, to make sure both sides are lightly coated. Sprinkle with salt and pepper.
Bake for 10 minutes and then flip polenta over. Sprinkle with grated parmesan or romano and bake for another 10 minutes.
Rich and creamy with a touch of saltiness from the cheese. A nice starch alternative to potatoes or rice. Less carbs too! (I have no idea if that's a correct statement, I just made it up.)
To round off this meal and add some color, I quickly sauteed some zucchini and sliced cherry tomatoes. Olive oil, salt and pepper, done.
As I say to my son when he's gagging on broccoli, this meal was "deeeeeeeeeeee-licious!!!" (Doesn't make him stop gagging, though.)

I wish we had TJ's here.. Whenever we go to my in-laws in So. Cal, we go to TJ's! :)
Trader Joe's is the Universe's way of telling moms that they are loved. I'm utilizing their brilliance tonight myself. Don't know how yet, but there's bound to be something in the freezer and pantry.
