Chocolate Chip Peanut Butter Banana Cookies

1/22/10

(Picture from my sister, who tried out the recipe the other day)

These were staring at me today:

The bananas, not the avocado. I'm pretty sure I buy bananas and purposely neglect them, because then I have no choice but to turn them into bread or muffins. But today I wanted cookies. And peanut butter. Chocolate. I blame the rain. So here's what I came up with:

Chocolate Chip Peanut Butter Banana Cookies

1 stick unsalted butter, softened
2 ripe bananas
1/2 cup creamy peanut butter
1/2 cup brown sugar
1/2 cup granulated sugar
1 egg
1 tsp vanilla
2 cups flour
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp cinnamon
1/4 tsp salt
1 cup mini chocolate chips
Sugar and cinnamon, for dusting

Preheat oven to 350 degrees. Mash 2 ripened bananas. They don't have to be black, as you can see from my picture above.

Add butter, peanut butter, both sugars and vanilla. Mix.

Oops, I forgot the egg. Add that too.

In a separate bowl, whisk together flour, baking soda, baking powder, cinnamon and salt.

Add to banana mixture slowly, combine.

Stir in mini chocolate chips.

Drop by large spoonful onto greased baking sheet (I use parchment paper instead). In a small bowl, pour 1/4 cup of sugar and 1/2 tsp of cinnamon and stir. Sprinkle over unbaked cookies.

Bake for 10 minutes or until slightly golden brown.

These are ridiculous. If the bananas were staring at me, then the cookies have a gun to my head and are whispering in my ear, "eat me you moron."

Dear Siri,

I was mad at you for making these cookies the day after my birthday and I am mad at you once again for reposting it during lent. I'm not Catholic (or am I?) but shame, shame on you!

Hi Siri, I am a friend of Haley's (originally from Janesville, WI). I started following your blog after seeing something about it on Facebook. Anyhoo, I made these cookies according to your directions, and then I split the dough into two bowls; I baked one half as directed, and added oatmeal to the other half before baking (partly because it makes me feel less guilty for eating my body weight in cookies if there is oatmeal in them, and partly because I REALLY like oatmeal). Both versions were amazing, and will definitely be making them again soon. Keep up the good work, I absolutely love your blog :)

Ashley - oatmeal, GOOD idea! Anyone from Janesville is a friend of mine : )
