Feeling wishy washy here (and I even get to EAT it :) I'm a HUGE fan of sage butter...but numero uno looks pretty amazing. You can always make a sage butter sauce on a side dish!
I think #3 sounds the YUMMO, but #1 sounds more challenging and I like stories. GO #1!

ohhh malt beer brined sounds good. I am making a szechuan turkey thats amazing it also cooks with beer.....yum can't wait to hear how they turn out whichever one that wins !!!
