Meatloaf & Vegetable Soup


You heard me right, meatloaf soup. Sounds a little odd, right? WELL YOU'RE ODD! Actually, it was very, very tasty. You see, the other night I made meatloaf and I had leftovers. Rather than making a sandwich like I often do, I decided to turn it into soup! Basically, I took every vegetable I had, sauteed them, added chicken stock and tomato paste and threw in the chopped up meatloaf. I tell you, it tastes good to be resourceful.

Sauteed onions and garlic...


Carrots...


Yellow squash...


Green peppers...


Tomato paste, 1 tsp cumin and lots of salt and pepper...


Chicken stock and meatloaf...


Soup!
