You heard me right, meatloaf soup. Sounds a little odd, right? WELL YOU'RE ODD! Actually, it was very, very tasty. You see, the other night I made
meatloaf and I had leftovers. Rather than making a
sandwich like I often do, I decided to turn it into soup! Basically, I took every vegetable I had, sauteed them, added chicken stock and tomato paste and threw in the chopped up meatloaf. I tell you, it tastes good to be resourceful.
Sauteed onions and garlic...
Carrots...
Yellow squash...
Green peppers...
Tomato paste, 1 tsp cumin and lots of salt and pepper...
Chicken stock and meatloaf...
Soup!
We eat meatloaf pretty frequently and I'll have to try this with the leftovers next time. Resourceful and I like it!
