Chicken Parmesan Burgers


Sometimes, don't you just want to eat crispy, breaded chicken smothered in marinara and cheese aside a generous helping of buttery noodles? Well, you can't. I mean, you can, but not all the time. Well, you CAN all of the time, but then your clothes won't fit. Not to worry, because I came up with an alternative last night! Everything you love about Chicken Parmesan in a healthy burger.

Greek yogurt keeps any burger ridiculously moist, and panko will give it that crispy crust. A ton of garlic and fresh herbs for that Italian flair. A dollop of spicy Arribiata, a fresh tomato and one slice of salty mozzarella. Served with spaghetti squash and a green salad. You can keep your clothes, and you're welcome.

Chicken Parmesan Burgers
(Makes 4)

1 lb. ground chicken
1/2 cup panko
1/3 cup grated Parmesan
1/2 cup nonfat Greek yogurt
1 tsp chopped thyme
1 tsp chopped rosemary
1 tsp chopped basil
1/2 tsp oregano
6 cloves garlic, minced
1 tsp salt
1/2 tsp pepper
1/4 tsp red pepper flakes (optional)
2 T olive oil
1 large tomato, sliced into 4 slices
4 slices buffalo mozzarella
Arribiata sauce


Combine first 12 ingredients in a bowl and stir with spoon or hands.


Heat olive oil in large skillet over medium-high heat. Form 4 burger patties and place in hot oil.


Saute for approx. 6 minutes per side, until you have a golden brown crust.


Preheat broiler to high. Place burgers on a baking sheet. Spoon a dollop of Arribiata on each burger. Top with a tomato slice and then the cheese.


Place under broiler for a couple of minutes, until cheese is melted and bubbly.

  1. Mix a burger with chicken parmesan and I'll certainly be happy. These look amazing, Siri. And yes, I did know about Sweet Lady Jane coming to Montana!!! I'll be there on opening day getting my triple berry cake and gabe's blueberry pie. :)

    These were good... added a little more fresh herbs than called for plus a few extra... subbed Rice Chex pulsed in the food processor for the panko... (had someone with celiac's dining with)

    Don't start with your heat too high or the crust/brown will form before the its cooked enough... had a lot of compliments!

    Served with some Cauliflower tossed and marinated with a ton of garlic, some olive oil and sea salt and pepper then roasted....

    add some basil leaves to the top as a nice garnish... some chiffonade
