I just brewed my coffee, and it doesn't taste very hot. Is my pot playing an April Fool's Joke on me? I don't think I'm a fan of the holiday. What's funny about your mom pretending that your house is for sale? (Happened when I was a kid.) Or your brother peeing on a Saran wrapped toilet? (Also happened. Wait, I did that to him. That was funny!)
Moving on to another holiday, Easter. If you celebrate it, or even if you don't, here are some ideas out there on the web that I love, and may or may not make in the next few days...
Smoked Salmon Deviled Eggs
Source: The Bitten Word. I love eggs. Egg salad, scrambled eggs, omelets, hard boiled eggs, frittatas, eggs over easy, Humpty Dumpty. Was he an egg? Anyway, the combo of deviled eggs and smoked salmon is brilliant. I want this right now for breakfast with my lukewarm coffee.
Easter Egg Cake Pops
Source: Bakerella. I am making these. There's no "may or may not" about it, I've already purchased strawberry cake mix, cream cheese and cute little Easter-themed sprinkles. Side note: I will buy any sort of themed sprinkles. I don't care if I don't even understand what the theme is, I will buy it, because, they are neat!
Carrot Cake Whoopie Pies
Source: Northern Fuller Family. Are you kidding me with these? I love carrot cake. I love whoopie pies. I love combining things. I love repeating myself. I love carrot cake. I love whoopie pies...

Trader Joe's has the whoopie pies. They call them inside out carrot cake..and they are SINFUL.
One thing on the pies... They are MUCH better after being refrigerated for a couple of hours! I even liked the honey/cream-cheese filling a bit better the day after I made them. (this goes for the Red Velvet ones too!)
I'm a sucker for themed sprinkles too. I have no clue why, I never make cut out cookies or fancy cupcakes. But I've got sprinkles damn it LOL :)
Best whoopie pie I ever made was:
Banana cookies (which usually turn out moist and cake-like bc of all the overripe banana in them).
And I made a peanut butter frosting with just peanut butter, butter and powdered sugar (which I could have eaten all by itself. OMG.
Any way, sandwich the banana cookies with the frosting. Serve with milk. So so so so so good. So good.
