Grilled Roasted Chicken Nachos

This is not a mommy blog.  But I feel it is my duty to share with you how tired I am, in case I need an excuse for writing something stupid or deciding to whip up an ambrosia salad or something.  The thing is, I do not give birth to babies who like to sleep.  And if you do, if your 8-month-old sleeps 12 hours a night, I can't hear about it, or I'll turn mean on you and make up a song that rhymes your name with bad words.  Like, if your name is LuLu I will sing, "LuLu is a PooPoooooooooo."  You get it.  I'm averaging 6 hours of sleep a night and if you think those hours are consecutive HA, ha ha, hahahahahaha NO.  Look, I'm not asking for sympathy, I know this comes with motherhood, it's all worth it, yadda yadda yadda.  But this blog has been therapy for me from the beginning, so it is helpful to write it all down.  Even if I might regret that poo poo part later.

You know what else is helpful?  When Carson comes home with two mystery chickens, and roasts them on the BBQ.  Then he shreds them atop sturdy tortilla chips and places that on a cast iron griddle and places THAT on the grill.  Cheddar and Monterey Jack.  Bubbly, melty, smoky nachos.  A side of his homemade guacamole, sour cream and jalapenos.  Wow they were good.  Perfect summer outdoor food, especially to feed a crowd.  p.s. That picture above looks like the state of Wisconsin.  Do you see that?  Or is that the sleep deprivation working its magic...

Love It! Great idea. Never thought about putting the cast iron on a griddle.
Personally I think anyone who tells you their 8 month old sleeps through the night should be kicked in the shins! My kid never slept either and everyone always used to say - "Once the double their weight" - "add some cereal into their bottle". Nothing worked and then one day he slept - so hang in there Momma.
Drink some tequila and just hang in there!!! ha ha

Those look delicious! And such a good idea for the heat. Last night we turned the OVEN on (WHY?!?!) and it is hot in Santa Monica right now!

p.p.s. sorry about not sleeping. I wrote a crazy sleep deprived poem on my blog the other day, and I don't even have cute kids to blame....

That looks incredible, definitely going to try it.

I feel for you, truly remember the day of begging for my kids to "just sleep later than 6 a.m." Then they become teens and you'd give anything for the toddler/infant years! So enjoy them! :)

Wow what a great new look the blog has! Well done!! Only suggestion: the main text in the post write up is a LOT smaller than before, making it less inviting to read. Pictures and other fonts look great though!

I am definitely going to have to try this recipe! I also have a baby girl who will be 8 months old on Friday and she does not like to sleep! My older two were excellent sleepers and this one gives me 6 hours at the most, too!

I feel you with the sleep deprivation... I have an almost 9 month old who enjoys getting up at around 4 a.m. every day. Doesn't help having to take two kids to school in the morning and get myself and 4 kids ready. Some days my 7 year old says "mom, you can't wear that to my school" if I look particularly questionable. wouldn't trade it for anything, as I imagine you wouldn't either :)

You are NOT alone. I have an almost 8 1/2 month old who wakes up 3-4 times a night! And once he is asleep he's read for the day at 6:30. But it'll pass we will sleep again, someday one day.
