Pea Pesto Crostini
8/22/11
Good morning this is the best thing in the world. Sorry, I have to skip our regular chit chat and just get to it. Make this. It is so fresh and flavorful with the perfect balance of texture. I even turned a pea hater into a pea lover. Click here for the recipe: simple and very few ingredients. I didn't have cherry tomatoes but I'm sure they would look real purrrty on top, especially at Christmas time. I also added a few basil leaves to brighten it up and give it that familiar pesto flavor.
All I had was a blender that sucked, so it didn't exactly puree the stuff but I actually liked the texture that a few whole peas added.

I'm totally going to try this. I can already taste it, it looks so good!
I made this; it is great. Now I have leftovers, but I don't feel like making more crostini because I am lazy. Can you think of anything else this would be good with? I am officially putting you on the spot.
Molly - I happen to have some leftover AS WELL. I've been thinking it would be good with pasta? Warm it up slightly, toss in some spaghetti or angel hair? It would also probably be good spread cold on a sandwich. Turkey or Italian. Or just eat it with a spoon.
I need to make this right away. And I love the idea of putting the leftovers over pasta. Then I'll bathe in it.
