Fried Chicken: the Healthy(ish) Way

Chicken breast, egg whites, panko, HOT cast iron pan, peanut oil (only 1/4 inch or so up the pan), salt and pepper. Crispy, crispy, juicy, juicy "fried" chicken. Thanks be to unhealthy cravings and bikini weather.

This looks so good! I'll have to try it, I bet the peanut oil gives it a great flavor.
