Traditional Irish Cake
3/17/11
I made this for the very same reason I am drinking a Guinness right now... St. Patrick is making me. And if you don't do what St. Patrick tells you to, you'll have bad luck for the rest of your life. That's what this holiday is all about. That, and getting drunk off of green food coloring. Look! Mashed potatoes in a chocolate cake batter!
But, as I got halfway through the process I realized I had almost nothing I needed. Self-rising flour, eggs, parchment paper, my brain. So here's how I altered the recipe...
-I used all-purpose flour instead of self-rising, so I added 1 tsp of baking soda.
-Only had one egg, so I added 1/4 cup of water and 1 tsp of oil.
-I didn't have parchment paper for the clover cut-out, so I took a piece of paper, cut out the shape of the clover, used the paper as a guide and placed it all on a silicone baking mat...
Also forgot to grease my cake pan (seriously, Siri)...
So the cake came out all messy and I could barely frost it...
But I swear to St. Patrick, it tasted great!
