Roasted Vegetable Couscous Salad

There are nights when I have zero ideas for dinner. Last night was one of them. Even as I started cooking, I still didn't know what direction I was heading. I started by roasting a random assortment of vegetables... olive oil, salt and pepper, 450 degree oven...


Then I made a dressing with shallots, mustard, red wine vinegar and olive oil...


Finally, I made couscous. I drizzled the dressing over the roasted vegetables and served that over the couscous. And, because I am a meat-eating dinosaur, I added a scoop of homemade chicken salad.


Dinner. Random. Tasty.

Roasted veggies are a staple side for us. You don't use Italian Seasoning?! We ran out of it last time we made veggies and they tasted so blah to me.

I love those random dinners that turn out delicious. Roasted veggies, really what could be bad about that?

Chicken salad on roasted veggie cous cous? Sounds weird! But I'm willing to try it because I too love all those things.
