White Chocolate Chip Coconut Cookies

I have been craving coconut lately. The taste makes summer feel official, doesn't it? It transforms my kitchen into a tropical resort! Well, as long as you're listening to this song. An imaginary vacation in your own house, what better reason to bake than that? Also, I noticed some new faces in the backyard today... so I have people to unload batch after batch of cookies to.
These are really delicious. They taste like a buttery sugar cookie, but with the added sweetness and texture of white chocolate and coconut. Maybe I won't give them ALL away. Right? Put the lime in the coconut, you call me in the morning, ooo oo oooo...
White Chocolate Chip Coconut Cookies
(Makes 24 cookies)
2 sticks unsalted butter, at room temp
2 cups sugar
2 eggs
1 tsp vanilla
1 tsp almond extract
3 cups flour
1 tsp baking soda
1/2 tsp salt
2 cups shredded sweetened coconut
2 cups white chocolate chips
Preheat oven to 375. Cream together the butter and sugar until well mixed. Add eggs, one at a time, and then vanilla and almond extract. Mix until combined.
Add flour, baking soda and salt and stir. Then stir in coconut and white chocolate chips. Get your chubby 14-month old to help out.
Drop by rounded spoonful onto baking sheet.
Bake for 8-10 minutes.

Is that sweetened or unsweetened coconut, or does it make a difference?
Just updated it, I used sweetened!
