Rosemary and Parmesan French Fries


I promise I'll be back to my usual "cook-every-night-blog-every-morning" self before long. For instance, on St. Patty's Day tomorrow, I'm planning on making Corned Beef and Cabbage with Susie's Potatoes and Irish Soda Bread. Guinness Float for dessert? I think so! No, I am not Irish. But I live with Irishmen and I like the color green.

Yesterday was my son's first birthday. A perfect day, capped off by a perfect evening. He got to choose his own birthday dinner, of course, and he told us he wanted Lollipop Lamb Chops. (He's a really good communicator for his age.) Have you ever seen a baby suck on a meat bone? It's Jack's favorite thing. Pork chops, ribeye bones, lamb, veal chops... I'm sorry vegetarians. Is this good for him to suck on? Who cares, it makes him happy and his dad even happier. By the way, this is my son:

First Birthday Menu:

Grilled Lollipop Lamb Chops
Wasabi Mashed Cauliflower
Grilled Asparagus
Rosemary and Parmesan French Fries

Carson was at the grill, and cooked the Lamb Chops and Asparagus perfectly. I gathered inspiration for the Grilled Asparagus from my friend Ari and marinated them with olive oil, balsamic vinegar, lemon juice, a dash of hot sauce, a dash of worscestershire sauce, salt and pepper. They do. I didn't want to stress over dinner last night, so I got a little Semi-Homemade and whipped up this easy peasy side:

Rosemary and Parmesan French Fries

Ore-Ida Extra Crispy Fast Food Fries
Olive oil
Chopped Rosemary
Grated Parmesan
Garlic Salt

Combine all ingredients in a baking dish. Shake.

Bake in oven at 450 degrees until nice and crispy. Shake dish a few times while baking to ensure an even crispiness.

We ate outside, watched the sunset, and stayed up until 8:41pm (yeah, late) to celebrate the best day of our lives...

I just split a gut as i scrolled down...Bam Bam...love it...AND the recipes!!!...Making one of your simpler recipes tomorrow...tunafish :)...then on to polenta and this past recipe of lambchops and potatoes..I also have to say the photos make my mouth water...carry on!!
