Spicy Oven Baked Chicken Drumsticks

This chicken is spicy. Not, "inedible why are you trying to kill us" spicy, because Carson loved it and ate 3 of them, but HOT. Since I had leftover tzatziki, I was looking to create something spicy to dip it in and I was successful! GREAT crispy skin, juicy chicken, really great flavor but next time, if I was cooking this for myself and not Carson, I think I would cut the peppery spices in half.

Spicy Oven Baked Chicken Drumsticks

6 Chicken drumsticks
1 cup tortilla chips
1 cup panko
1/4 cup grated romano (or parmesan)
1 tsp paprika
1 tsp cayenne pepper
1 tsp salt
1/2 tsp pepper
3 egg whites
Olive oil


Preheat oven to 450. Grease the bottom of a baking dish with olive oil. In a Cuisinart or blender, crush tortilla chips until they resemble bread crumbs.


In a bowl, combine crushed tortilla chips, panko, grated romano, paprika, cayenne, salt and pepper.


Place egg whites in a bowl and season with salt and pepper. Set up a dipping station with bowl of egg whites, bowl of dry mixture, a Guinness for drinking and your baking dish. Wash and dry your drumsticks with a paper towel.


Dip drumstick in egg whites and then in dry mixture, coating completely. Place in baking dish.


Bake for 40 minutes. Burn your mouth off! Just kidding. Not really.


By the by, I never have drumsticks in the house but I bought them because they were 50% off. Is it a good idea to buy discounted poultry? Seems like an area where you might not want to cut corners. Hmm. Well I did it. And I think I feel fine.
