Another Chocolate Chip Cookie...


Bread flour, cake flour, all granulated sugar, all brown sugar, some powdered sugar, muscovado sugar, coconut sugar, browned butter, salted butter, shortening, chocolate discs, layered dough, chilled dough, pudding mix, cake mix, oatmeal... YOU NAME IT, I've tried it.  I have tried one BILLION variations for chocolate chip cookies.  And when I think there is nothing new left, something comes up.  However subtle the change, I will try it.  Do you know why?  It's an excuse.  It's an excuse to bake and to eat spoonfuls of cookie dough.  "Oh, in the name of research I should probably find out what happens if I use some turbinado sugar as well as the brown and granulated sugar!"  Which is what I just did with these cookies (recipe here).  They were quite lovely, the turbinado sugar (aka "sugar in the raw") gave the cookies a subtle crunch.  

So, anyone have another variation I just HAVE to try??

  3. My grandma used to make us these giant chocolate chip cookies growing up.
    A month or so ago I was on a search to make giant cookies for my own kids. I came across this recipe that uses no lie, about 1/4 cup of cookie dough in each cookie! I kind of press down on the dough a tiny bit because I fear they will be over cooked on the outside before the inside is done. But it always seems that once the bottom edges start to brown they are ready.

    The dough and the cookies were amazing! It makes less cookies obviously as each cookie is probably the equivalent of 3 or 4 regular cookies. I am not going to win any parenting awards for that, but who needs awards?

  5. Love it! especially fresh out of the oven!! I've tried a few variations too. Tried with spelt flour, half whole wheat and half white. I think the two best recipes was: 1) a recipe with unbleached white flour, panela sugar (that sugar gave it a richer taste); 2) a recipe where you soak the ingredients in vinegar or whey (http://livesimply.me/2014/03/12/soaked-chewy-whole-wheat-chocolate-chip-cookie-recipe/). Both were moist and so tasty!!

    I would like to try using other ancient whole grain flours in future though.

  9. The food at this place was great. We shared the special and it was delicious. The food was very savory and probably my most favorite meal ever. The drinks from mcdonalds secret menu were fantastic - an abundant amount of coffee perfect for a cold winter night.
