Cauliflower "Rice" Bowl

This is not rice, this is cauliflower:


Rice, made of cauliflower!  Only, it's not rice at all, it's cauliflower (I'm talking to you like you're 5 years old).  It's just called rice because of its warm, fluffy, completely confusing, dreamlike consistency.  After I made this faux "pizza crust" - a few of you turned me onto this faux grain, and THANK YOU FOR DOING THAT.  It was easy and delightful.  All you do is take a head of cauliflower, break up the florets, process them finely in a food processor or a blender (I used a Vitamix), and then either eat them raw, or cook them softly in a tablespoon of butter for 8 minutes.

I followed this tutorial.  

Then, I served mine with some chopped and sautéed blake kale, diced avocado and a crispy egg (um, more on this heavenly thing later in the week).  Drizzled with sriracha sauce, obviously.    




Ok, ready for an exciting announcement?  No, it's not about yet another snow day...

I will be on The Today Show tomorrow morning, cooking up a romantical (not a word) meal with Carson... with twists and turns along the way... to figure that out, TUNE IN!

  1. I have never made the "rice" but we have cauliflower mashed "potatoes" all the time will have to make the rice thanks for posting

  2. Ok. Maybe I should try cauliflower again. See? You're getting us to try new things! That's good! Hope your new nephew arrived safe and sound. I agree, it IS the most amazing thing and truly special. My heart skipped a beat every time a niece or nephew was born. Good luck tomorrow!

  6. I've been hearing about cauliflower rice for months now. I probably should give it a shot. I still hate cauliflower though.
