S'More Cookies

We are going "fancy camping" today. Fancy, because it involves queen beds, Blackberry chargers, walls, ceilings, real bathrooms, Bloody Mary's and this...

...in cookie form:


That's putting the fancy in a campfire S'more, if you ask me. But don't worry, we'll do our share of roughing it. I bought a flannel, and Carson bought a flashlight you wear on your head.

Back to the cookies. I wanted to deconstruct the flavors in a graham cracker and make the cookie taste just like it, and I think I did! Molasses, brown sugar, cinnamon and, well, graham cracker crumbs. Hard to mess up the flavor with those! Add chunks of the irreplaceable Hershey's milk chocolate and tiny, fluffy marshmallows and you have one delicious fancy camping cookie.

S'More Cookies
(Makes 2 dozen)

1 cup (2 sticks) unsalted butter, room temp
1 1/2 cups brown sugar
1/2 cup granulated sugar
2 eggs
1 T molasses
1 tsp vanilla
2 1/2 cups all-purpose flour
1/2 cup graham cracker crumbs
1 tsp cinnamon
1 tsp baking powder
3/4 tsp baking soda
1/2 tsp salt
2 cups mini marshmallows
3-4 Hershey's chocolate bars, broken into chunks

Preheat oven to 350. With a mixer, cream together butter and both sugars until smooth. Add eggs, molasses and vanilla. Mix until combined. In a separate bowl, stir together flour, graham cracker crumbs, cinnamon, baking powder, baking soda and salt. Add to wet ingredients and mix until just combined. Stir in mini marshmallows and chocolate chunks.



Place desired size of cookies on parchment-lined baking sheets. Bake for 10 minutes or until golden brown.


The perfect bite, without smelling like a campfire...

  3. Made this today so I could preview them before a big Labor Day weekend party. Also just could not wait. Devilish awesomeness. I didn't think it was possible, what with all the fresh fruit dessert options this time of year, but you now have all that competing with this summer cookie, and the cookie is winning more times than not! And for the next batch, I will make some large sized ones so we can make ice cream sandwiches with them.
