Crispy Parmesan-Herb Baked Chicken


Last weekend, I volunteered at a homeless shelter. Don't worry, I'm not here to talk about what a good person I am. I'll save that for my new blog, siriisareallygoodperson.com. This blog is about food, and the woman running the dinner made a magnificent meal! Boiled red potatoes with parsley and butter, green beans with crispy almonds, a salad with a fresh, homemade avocado dressing and an incredibly moist white cake for dessert. But the star of the night was the chicken. Baked to perfection, crisp skin, seasoned just right, simple, amazing! She inspired me to try my own, and here it is...

Crispy Parmesan-Herb Baked Chicken
(Serves 6)

Whole Chicken, cut up into breasts, legs, wings and thighs (skin-on)
Extra virgin olive oil
1 tsp fresh thyme
1 tsp fresh rosemary, chopped
1/2 cup chicken stock
1 T unsalted butter, melted
Grated Parmesan
Salt and pepper

Preheat oven to 350. In a large skillet, heat a generous amount of olive oil along with the fresh herbs over medium-high heat.



Rinse and pat dry chicken. Season both sides with salt and pepper. Place skin side down in skillet and do not move. Saute for 5-6 minutes, until skin is golden brown.


Remove chicken from skillet with tongs and place in a baking dish, skin side up. Add chicken stock and leftover oil from skillet to bottom of pan. Pour melted butter on top of chicken pieces. Sprinkle with grated Parmesan.


Bake for 45 minutes or until chicken is fully cooked. Serve with sauce from baking dish.
