Chocolate Chunk Brownie Cookies

It's hard not to start off every post with the phrase "something is wrong with me" when you eat cookie dough for breakfast. Oh well. Hey... maybe there's nothing wrong with me!? Maybe there's something wrong with YOU!! You ate granola and fruit for breakfast, didn't you?? WEIRDO.
Moving on. I've been craving brownies lately. At the same time, I've been wanting to create something new and different. Therefore, I combined those two desires and came up with Brownie Cookies! Not a revolutional creation, mind you, because once I googled it to compare recipes I found that a lot of people have come up with Brownie Cookies. Ah well, new and different on this particular Tuesday for this particular blogger.
These are delightful. After eating the dough for breakfast, I ate a cookie for my mid-morning snack. Chewy, rich and fudgy, just like a brownie but in cookie form! The espresso and coffee in this recipe are only to enhance the chocolate flavor, and boy do they. Man I love chocolate. Chocolate, chocolate, chocolate in my tummy, tummy, tummy. (I've been watching too much Yo Gabba Gabba...)
Chocolate Chunk Brownie Cookies
(Makes approx. 18 large cookies)
2 cups bittersweet chocolate, chopped
4 T unsalted butter
4 eggs
3/4 cup brown sugar
1/2 cup granulated sugar
1 1/2 tsp vanilla
1 tsp brewed coffee
1 cup flour
1 1/2 tsp baking powder
1/4 tsp salt
1 tsp espresso powder
1 cup chocolate chunks
In a small saucepan over low heat, melt chopped bittersweet chocolate and butter, stirring occasionally. Remove from heat and let cool.
Cream both sugars and eggs with electric mixer until smooth. Add vanilla and coffee and mix.
In a separate bowl, whisk together flour, baking powder, salt and espresso.
Add melted chocolate to egg/sugar mixture and stir or mix briefly.
Fold in dry ingredients until just combined.
Add chocolate chips.
Cover dough and refrigerate for 30 minutes. Preheat oven to 350. Once chilled, remove and drop by spoonfuls onto baking sheet. Dough will be sticky! That's okay.
Bake for 8-10 minutes. I always remove my cookies when they look slightly underdone, keeps them moist. I hate that word.

Why didn't I see this recipe BEFORE I went to the grocery store? Crap now I need to go back to get a ton of chocolate to make these :) Look fab Siri, can't wait to make them!
