Italian Sausage with Caramelized Onions and Tomatoes


I am on vacation. The best kind, where days start to blur into each other and you're not sure if it's Monday or Friday and you don't care. The kind where you suddenly realize you haven't showered since you've been here. No, you don't understand, I have a condition where I'm terribly afraid of water. (No.) The shower here is broken? (No.) I hate showering. (Yes.)

Before we got here, I was trying to get rid of every item of food in our fridge, so I made a dinner with anything and everything we had left. It turned out to be delicious, and I will make it again! Exclamation! I don't really remember what I did, but I will try, for you...

I sauteed some Italian Sausage in a bit of olive oil and I threw in some freshly chopped assorted herbs...


I caramelized some sliced onions in olive oil, slowly, over medium-low heat, and threw in a cube of Dorot garlic and basil...


To that, I later added sliced cherry tomatoes and let them caramelize too...


Once the sausage was mostly cooked, I added the caramelized mixture. It wasn't thick enough for me, so I added a roux of butter and flour whisked together (about 1 tsp of each), and I stirred it into the sausage until the sauce thickened...


Lastly, I added some fresh arugula and let it wilt. Season it up with salt and pepper, and serve it over pasta, rice or just eat it alone.

  4. I found some Italian sausage in my freezer and I remembered you had made this a while back and wanted to try it, so I did! Used spinach instead of arugula because that's all I had, and I threw in some red and yellow bell pepper. Turned out great! Thanks for the recipe!
