Tuna Cakes
In my family we eat a lot of tuna. Tuna salad on crackers, tuna melts... and that's about it. The same old same old can get boring, am I right?
Something about being on vacation at the beach makes me crave crab, and the other day I would have murdered someone for a crab cake. Alas, it wasn't in the cards, so I swallowed my irrational need to murder someone and tried an alternative... tuna cakes! They were delicious, and my one and a half year-old loved them too, lots of thumbs up there.
I can't really write a recipe for this because I just threw a ton of stuff together. Tuna, mayo, dijon mustard, lemon juice, bread crumbs, paprika, salt and pepper and fresh chives. Form them into patties and saute them in olive oil until golden brown. Serve with tarter and lemon wedges.
Crab cakes, you are dead to me now.

ReplyDeleteYou must try and tell me at least of how much you used to make a tuna cake! 1 can or 2? How much musturd and what kind of bread you used? PLLLLLLEEEEASE :( haha

ReplyDeleteJess, I used one 12 oz. can of tuna, maybe 1 tablespoon of mustard and plain old bread crumbs. But Italian bread crumbs or panko would be great too! Maybe 1/3 cup of mayo? Juice of 1/2 lemon. Season to taste. Made 5 tuna cakes!
