Squash and Garbanzo Succotash

Hi. I'm back. I needed to take a full, 24-hour step away from food to recover from the Great Salt Catastrophe of 2011. I eased my way back in with simple succotash, made with garbanzo beans instead of the traditional lima nonsense.

I diced yellow squash and sauteed it in olive oil with some onions...


I added some drained garbanzo beans...


At the last minute, I topped it with a panko/parmesan mixture...


And then I ate it...
