CW: Mad Hungry's Lentil Vegetable Soup

Nooo, CW doesn't stand for the tweeny television network I often forget exists. It stands for Cookbook Week! Every day this week, I will feature a recipe from a different cookbook and today starts Day 1...

1. MAD HUNGRY, FEEDING MEN & BOYS, by Lucinda Scala Quinn.
There are many reasons why I love this book. a) It's purty. 2) It was made for me, HELLO, I live with a man and a boy. D) Lucinda creates hearty, satisfying meals that you can't resist trying.

Last night I tried out her Lentil Vegetable Soup with Homemade Garlic Croutons, the perfect end to our pumpkin carving, football watching (ouch, Vikings) day. Hearty, check, satisfying, check. Next time I'll add bacon. Recipe HERE.
