Watermelon-Berry Sorbet

"I carried a watermelon."

Name the movie. One of my favorite lines, and often quoted by yours truly. Dirty Dancing. Oops, you were supposed to guess. Well anyway, speaking of watermelon, isn't it a wonderful summertime fruit?! It's so refreshing. In fact, back in my younger days when I was hungover more than I should have been... I would always imagine that I was eating watermelon and it would make me feel better. True story.

Last night I made a Sorbet of fresh fruit, starring watermelon. It was very easy to prepare and good for you too. Would make a nice 4th of July treat for your friends and family. Make sure you wow them with my movie trivia as well.

1 cup water
1/2 cup sugar
2 cups cut-up seeded watermelon
2 cups fresh raspberries, strawberries and/or blueberries
Extra berries for topping

In a medium pan, combine water and sugar and bring to a boil. Stir until sugar dissolves. Reduce heat and boil uncovered for 2 minutes. Cool slightly.

Chop your watermelon...

In a blender, combine watermelon and berries (I chose raspberries and blueberries).

Cover and blend for 30 seconds. Add warm syrup, and cover and blend until smooth.

Transfer mixture to a 13x9x2 baking pan.

Cover and freeze for about 2 hours. Serve with fresh berries and mint (optional).

  1. This looks awesome Siri! I just picked up a watermelon today for the weekend! They are so good for you and I love your hang over cure trick - I'll have to give it a try - not that I'm EEEVER feeling hung over - nope, not me, never... ;)
